One pan wonder...

7:30 am drop-off at school
8 am Shoprite and CVS for mom's essentials
10 am drive over to mom's house
1 pm back home for an appointment in the showroom
3 pm pick-up Brenna, come home to start homework
4 pm drop Brenna back at school for theatre practice
4:20 pm return phone calls; pack an order to ship; work on blogs 
6:20 pm pick-up Brenna from practice
By now it's close to 7 pm and we are really hungry, but what can I make for dinner, fast and simple? Well, what's in the fridge? I always keep something in reserve for on-the-go days like this. Let's see, there's chicken sausage from Trader Joe's, an onion, peppers, potatoes... I can make a meal out of that.


Peasant Potluck

1 chicken or kielbasa sausage, sliced in 1/2" pieces
1 red pepper, cut up in 1" pieces
1 green pepper, cut up in 1" pieces
1 large onion, sliced in chunky pieces
2 medium potatoes, peeled and chopped in 1" chunks
2 tablespoons light olive oil
1 cup chicken or vegetable stock
1 tablespoon dried parsley flakes (if you have fresh parsley, chop up about 3 tablespoons)
1 tablespoon Italian herbs (my staple Mrs. Dash blend)
Salt and fresh ground pepper to taste

1) In a large stove-top skillet, heat up the olive oil on high and saute the onions, peppers and potatoes, about 3 minutes. Add in the sausage.
2) Pour in the stock, add the parsley flakes, Italian herbs, salt and pepper. Toss all together and bring the stock to a boil. Cover and lower the heat. Cook at medium for about 10-15 minutes, stirring occasionally, until the potatoes absorb the stock and become tender. 

That's it, we're done! Time for dinner!
