Apple flapjacks...

Wow, already September... It's breakfast time... Hmm, I've got apples... In the mood for pancakes, though... Okay, add them all together, and you have a pretty yummy start to the day! Here's what you'll need to make this hearty flip on a classic...
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3 tablespoons granulated sugar
2 eggs
1 1/2 cups buttermilk
3 tablespoons melted butter
1 tablespoon vanilla extract
2 Granny Smith apples
1) In a bowl, sift together flour, baking powder and sugar.
2) In another bowl, beat eggs, buttermilk, melted butter and vanilla together.
3) Add liquid to flour mixture and whisk until well blended.
4) Peel and core the apples.
5) Cut the apples into 1/4 inch slices.
6) Heat pan (or griddle) over medium-high heat and lightly grease. Dip each of the apple slices into the pancake batter and place into the pan spaced about a half inch apart.
7) Bake until the top is filled with bubbles. Flip each one over to bake the other side.
These look ready!
Serve immediately with a dusting of powdered sugar and your favorite maple syrup...
